    from The Corkscrew Burgundy is the home of Pinot Noir and where the best expression of the grape can be found albeit at a price The more affordable bottles simply labelled Bourgogne i e Burgundy mostly don t do the region any justice and tend to be thin and cheap tasting in my experience But recently I tasted the Antonin Rodet Bourgogne Pinot Noir the best generic Bourgogne I ve come across in a while It s noticeably light but has a lovely mineral streak over some delicate savoury flavours Refreshing and elegant and sure to be great over Christmas dinner FOOD PAIRING The ideal all rounder with Christmas dinner for the Old World wine lover in particular where more acidic sauces e g cranberry will be used liberally Cono Sur Single Vineyard Pinot Noir 19 99 in O Briens Wines Mitchell Sons Dublin Redmonds of Ranelagh Dublin Sweeney s of Glasnevin Dublin Jus de Vine Portmarnock Dublin Bradley s of Cork O Driscoll s of Cork I m often asked what my favourite wine is one of the worst things you can ask a wine lover It s like asking what your favourite song is there is never one immediate answer and it all depends on mood occasion and a dozen or so other factors But the Cono Sur Single Vineyard Pinot Noir is usually not to far from my lips if pushed for an answer Sourced from you guessed it a single vineyard site near the Pacific in Chile this is clean and linear with an interesting saline mineral streak It still has all the New World Pinot Noir fruit up front but balanced out to give a really classy wine FOOD PAIRING Perhaps an even better all rounder with the Christmas dinner especially when ham is also involved as the Single Vineyard s fuller flavour means it can take more substantial ingredients thrown at it HEAVIER REDS If big and beefy is more your style then these two should do the trick Ideal with more substantial Christmas dinners such as roast beef or lamb or simply enjoyed by their own by the fire these are sure to warm the belly and the heart Marqués de Riscal Rioja Reserva 22 99 from supermarkets and all good independent wine shops Ah yes who doesn t like Rioja Reserva Its approachable silkiness with lots of flavour and full body make it an excellent go to wine when something red and warming is wanted Marqués de Riscal is one of the oldest and most esteemed in the region so you re bound to do right with 150 years of experience behind you This ticks all the Rioja Reserva boxes of aromas of leather and tobacco with savoury meaty flavours over some vanilla sweetness and a palate that s balanced and lip smackingly dry FOOD PAIRING Rioja and lamb is one of the classic pairings but it won t shy away from either beef roast or otherwise Niepoort Rótulo Dão 17 50

    can taste like by trying their Bicicleta Cabernet Sauvignon so named as their vineyard workers cycle around the vineyards to keep their carbon footprint low Expect loads of ripe blackcurrant and blackberry and a smooth palate It would be great with roast beef and other meaty dishes Judeka Orlando Nero d Avola RSP 14 99 from Sheridans Cheesemongers This is 100 Nero d Avola one of Sicily s indigenous grape varieties but the style we usually get here in Ireland is by and large a jammy confection made using a recipe aimed to please a bland international style This though is different much different Judeka don t use any oak barrels to age their wines meaning this is deliciously fresh and light with bright juicy red fruits Some nice integrated acidity means that it would be excellent with food with similar acidity think ragout based dishes like lasagne and Bolognese but it would be amazing as well with some roast lamb Masi Campofiorin RSP 17 99 from all good independent wine shops This year Masi Agricola celebrated 25 years in Ireland a great achievement for any foreign brand let alone for an Italian wine family When launched first in 1964 the now legendary Campofiorin effectively created a whole new Italian wine category though the company have fine tuned it even further since Originally the grape skins used for making another wine style called Amarone were added into regular Valpolicella kick starting a second fermentation which transformed the wine into a beefier more complex version of itself This was called ripasso or re passed a style now offered by many Venetian wine producers But today Campofiorin is made with wine from semi dried grapes instead of the used skins meaning a significant increase in quality and finesse over other regular ripassos As you would guess it s rich smooth and velvety with ripe cherry and sweet spice flavours It has quite gentle tannin and subtle acidity which makes it very approachable and versatile with food so try it with anything from meaty pasta dishes to bangers mash or roast pork Torres Gran Coronas Cabernet Sauvignon Reserva RSP 18 49 from Supervalu O Brien s and good independent wine shops If you re afraid that I m getting a bit soft with my recommendations of a fresh Nero d Avola or the soft and silky Campofiorin then fear not here s a wine with much more meat on its bones Torres is Ireland s favourite wine brand and was also this year voted the Most Admired Wine Brand in the World This is the baby brother of their iconic Mas La Plana RSP 60 which in the 70 s beat a bunch of Bordeaux wines including Chateau Latour RSP 500 1000 in a blind tasting so its pedigree is impeccable The Torres Gran Coronas has a rich cherry and blackcurrant character with some liquorice vanilla and leather notes too You know what to do with this roast beef steak stews if it

    beside you that the Maitre D had to seat you with the aid of a shoe horn Attention to detail is essential in all aspects of creating the right balance between ambience and a atmospheric vibe Cleanliness is nearer to godliness So you ve gone to the trouble of donning the glad rags and preening yourself to within an inch of your life for your night out so the last thing one would expect to encounter would be frequenting a dirty loo Folks we ve all been there and lets face it its not pleasant so its essential that the lavatories in a great restaurant are not only hygienically clean but have almost as much of a wow factor as the restaurant itself Would you care to order Its time to concentrate on the main event What culinary delights await from the aladdins cave of the kitchen Simplicity is key when it comes to creating a good menu without the need for a language degree to decipher what to order The last thing one wants is to be handed what resembles a phone directory on a night out Le Food style over substance It would appear we somewhat live by extreme in so far as some restaurants try to impress with style over substance serving tiny prettily dressed portions looking lost on the vast expanse of a white plate while others go to the opposite extreme and fill plates like an Irish Mammy at christmas serving up the loaves and the fishes with no thought or regard to the taste conflicts between the array of ingredients Indeed there is nothing worse then having to dream about supplementing your miserly proportioned dinner with a midnight snack at the golden arches of McDonalds or your local chipper a happy balance is required servings should be just right Fresh ingredients make a huge difference to what finally appears on your plate I am a huge advocate of promoting the use of locally produced ingredients Freshly baked bread sauces and pasta made from scratch make a world of difference Waiter waiter I always stand by the statement that the front of house staff in a restaurant are just as important as the back Trust me you would concur with me if you were greeted by a Manuel or Basil Fawlty from Fawlty Towers taking your order Your server should make you feel comfortable take your order and explain the menu if necessary and bring your food and drink without fuss clear away unobtrusively when finished Desserts to finish The piece de resistance for me in the making of a great restaurant is being able to finish off your culinary crusade with a sensational dessert If you have a sweet tooth like me four frozen vienetta style desserts will not cut the mustard pardon the pun a gifted Pastry Chef should showcase a wide selection of skillfully produced desserts designed to delight and also cleanse your palate For me the dessert is the best part
