    moment Alfons has been a farmer for eight years now Two years ago he bought an olive orchard on a mountain overlooking the town of Mas Vicenta pop 120 in the heart of arbequina olive country His first crop brought in 500 litres of olive oil that mostly went to friends and neighbors In 2011 he started supplying two restaurants in Barcelona Or Vell is still a one man company Alfons even does the graphic design for the labels along with some seasonal help from Mas Vicenta Now for the first time Or Vell is available to the public through Hamlovers In 50 cl bottles The process Alfons cold presses his olives no more than 48 hours after they are picked which is part of the reason for the oil s unusually low acidity What s really unusual though is the way he does it Nearly all olive oil production from small producers up to huge factories is done in a three stage process that involves injecting great quantities of hot water into the olive paste in order to separate the oil The problem is that many of the polyphenols which give olive oil is distinctive taste are water soluble and thus are washed away The two stage process employed by Alfons is far more labour intensive and time consuming rather than using hot water to extract the oil from the paste he uses mechanical pressure maintaining a temperature consistently below 25C The resulting oil is decanted using only gravity to separate the oil from the solids Unlike virtually all other olive oils no filtration is needed The result is an oil so flavourful that it turns a piece of crusty bread into a sensual experience The environment A typical three stage olive oil producer uses 1000 litres of water
