    established Another of Michaels sons Thomas took over the home business on his fathers death in 1917 and he in turn left it to his son Michael With a lot of help and support from his family Michal built the present eggs store and shop at Tullyleague in 1946 The business around 1940 to 1960 was mainly grocery selling with a shop and travelling shop and buying and selling eggs and poultry from house to house and trading at market days in the surrounding towns In the late 1950 s early 1960 s the UK market was diminished with England now self sufficient having been built up again after the war so the whole business was taking a change around In the early 1970 s the first commercial egg production hen house was built at Tullyleague and by now instead of buying eggs in the country they were now going out selling them and so the Carrick Cackler brand name was established The grocery and travelling shop business was wound down in 1972 and further expansion was carried out in the poultry business with the Broiler chicken market opening up In 1996 they built their first free range egg production house and established Carrick on Shannon Free Range Eggs In 2001 a second Free Range shed was built to expand production and a new purpose built packaging store with grading capacity for 7000 eggs per hour The business which is currently run by Ray Gannon who is the fourth generation of the Gannon Family are the longest running egg and poultry business in Ireland and the oldest business in Carrick on Shannon Tweet Shop Poultry Eggs Meat Frozen Foods Recent Recipies Grilled Chicken with Potato Wedges and Stir fry Vegetables Roast Chicken with Thyme Onion Stuffing Boiling an egg Since

  • Roast Chicken with Thyme & Onion Stuffing - Gannons Poultry
    the oven at Gas Mark 6 200 C 400 F Place the chicken and vegetables in a roasting tin Drizzle with the olive oil and season well with the salt and pepper Place in the centre of the preheated oven After the first ten minutes turn the heat down to Gas Mark 4 180ºC 350ºF Roast the chicken for approx 1 hour 20 mins allow 20 minutes per 500g plus 20 minutes over Halfway through cooking spoon the juices over the chicken and add a couple of tablespoons of water to the roasting tin to stop the vegetables from burning To check if the chicken is cooked pierce the thickest part of the leg the juices should run clear When cooked remove the chicken from the oven transfer to a carving board and cover loosely with foil Allow to rest for 10 minutes in a warm place while you make the gravy Strain all but 1 tablesp of fat from the tin then sprinkle in a tablesp of flour Cook for a couple of minutes and then add in 300 400ml of stock home made if possible and bring to the boil stirring and scraping to loosen the caramelised meat juices Simmer for 2 3 minutes and season to taste Strain into a gravy boat discard the vegetables and serve Delicious served with roast potatoes and vegetables cooked in the oven at the same time as the chicken Note To make chicken stock peel and chop 2 carrots and 1 onion Place them in a saucepan along with a trimmed and chopped leek and celery stalk if available Add in a chicken carcass 2 litres of cold water and a bay leaf Bring to the boil then reduce the heat and simmer gently for two hours Strain check the seasoning
